Where flavours are born - the soul of our cuisine

You don't see it right away, but you taste it. The kitchen at Onder de Linden is hidden behind a door. No big windows, no open bar - just a workspace. But whoever steps inside feels it immediately: something is happening here. Something is alive here.

The kitchen is the beating heart of our home. Not slick or sterile, but lively, warm and full of character. A place where stories emerge every day - in flavours, in collaboration, in moments.

An organised chaos full of passion

In the kitchen, it's all about rhythm. About timing. About sensing each other without words. Pans sizzle, knives tap on cutting boards, ovens buzz. And amid all this activity, there are jokes, short orders, whispered tasting notes. Sometimes a hefty curse too - because when it's busy, the pressure becomes palpable. But always with love. Because cooking here is not a trick. It is a craft. A craft.

Honest food with its own signature

We cook with attention. With honest products. Sometimes straightforward, sometimes with a creative twist. On our menu you will find familiar favourites - schnitzel, satay, spare ribs - but also tastings to share and course menus to enjoy. We call it:
Just honest, Enjoying together, and Ultimate dining.

Three experiences, one base: taste that's right. Dishes that stay with you. Without fuss, with soul.

A team that feels like family

Our kitchen employs people from different backgrounds. Young and old, experienced chefs and inquisitive talents. Everyone brings something unique to the table. What binds them together? The love of food. And the pride when a plate leaves the pass and is eaten down to the last bite.

We learn from each other. And we laugh a lot. Because without fun, even the best dish tastes bland.

A door open - figuratively then

We often say: what happens in the kitchen stays in the kitchen. But actually, everyone is allowed to know. That it smells like butter and thyme here. That it is tasted until it is right. That thought is given to that one guest with an allergy. And that every meal is a small work of art - not to be displayed, but to be enjoyed.
